Sodium Carboxymethyl Starch  like white powder. Odorless and tasteless. Dissolves in water at room temperature to form a colloidal solution. Easily soluble in water under stirring, or wetted with ethanol before adding to water. Making the aqueous solution acidic generates water-insoluble free acid and reduces viscosity. Relatively stable to alkali. Adding metal salts forms various water-insoluble metal salts, so it is not suitable for strongly acidic foods. It should not be in long-term contact with metals during manufacturing.
