Nisin, also known as nisin, is a peptide substance produced by Streptococcus lactis, which consists of 34 amino acid residues with a molecular weight of 3500 da. Because Streptococcus lactis can inhibit most Gram-positive bacteria and have strong inhibitory effect on spores of Bacillus, it is widely used as food preservative in food industry.
